Red pepper flakes, also known as crushed red pepper, are made from dried and crushed whole red chili peppers—including the seeds, which contribute to its heat. This spice is renowned for its ability to deliver a consistent, fiery flavor with a slightly fruity undertone, making it a favorite for sprinkling over pizza, pasta dishes, and stir-fries. For outstanding flavor, it is essential to use slow and low heat to infuse (bloom) the oil with the flavor of garlic and ginger. High heat could burn the spices and result in an off taste.

So, as you likely know, cayenne powder is particularly hot and spicy. As a result, it is primarily used to add heat, not flavor, to food. A little goes a long way with cayenne powder, so most recipes will call for relatively small quantities (usually 1/8-1/4 teaspoon for a whole meal).

This is my shortcut for salt-preserved chilies. I’m not really sure if it actually approximates salt-preserved chilies, but it does add really great spice and texture! Set aside and prepare the rest of your ingredients.
